उत्तराखंड में लोक के अनेक रंग हैं और हर रंग में प्रकृति के मनोहारी स्वरूप के दर्शन होते हैं। वह चाहे चंपावत जिले के देवीधुरा की प्रसिद्ध ‘पत्थरों की बग्वाल’ हो या उत्तरकाशी जिले के दयारा बुग्याल में मनाया जाने वाला उपला टकनौर क्षेत्र का ‘अंढूड़ी उत्सव’, जिसे अब ‘बटर फेस्टिवल’ के रूप में खास पहचान मिल चुकी है। यह ऐसा अनूठा उत्सव है, जिसमें एक-दूसरे पर मक्खन-मट्ठा की बरसात होती है। आइए! हम भी प्रकृति के इस उत्सव का हिस्सा बनें-

यूरोपीय देश स्पेन में खेली जाने वाली टमाटर की अनूठी होली 'ला टोमाटीना' फेस्टिवल के बारे में तो आपने अवश्य सुना होगा। ठीक इसी तर्ज पर उत्तराखंड हिमालय में भी मक्खन-मट्ठा की होली खेली जाती है, जिसे अढूंड़ी उत्सव (बटर फेस्टिवल) कहा जाता है। प्रकृति को समर्पित इस उत्सव का आयोजन समुद्रतल से 11 हजार फीट की ऊंचाई पर उत्तरकाशी जिले के उपला टकनौर क्षेत्र में स्थित प्रसिद्ध दयारा बुग्याल (अल्पाइन घास का मैदान) में किया जाता है। इस खास उत्सव का आनंद उठाने देश-विदेश के पर्यटक भी बड़ी संख्या में दयारा पहुंचते हैं। यह उत्सव भाद्रपद संक्रांति को मनाया जाता है। इस बार यह संक्रांति 16 अगस्त को पड़ रही है। आइए! मक्खन-मट्ठा की फुहारों में भीगते हुए हम भी दयारा की खूबसूरती का दीदार करें।


प्रकृति की गोद में समृद्धि का उत्सव

उत्तरकाशी शहर से 42 किमी की सड़क दूरी और भटवाड़ी ब्लाक के रैथल गांव से छह किमी की पैदल दूरी पर 28 वर्ग किमी क्षेत्र में फैले दयारा बुग्याल में पीढ़ियों से अंढूड़ी उत्सव मनाने की परंपरा चली आ रही है। दरअसल गर्मी का मौसम शुरू होते ही रैथल समेत आसपास के गांवों के लोग अपने मवेशियों के साथ बुग्याली क्षेत्र में स्थित अपनी छानियों (मवेशियों के लिए बने कच्चे मकान) में चले जाते हैं और फिर गर्मी की विदाई पर अंढूड़ी उत्सव मनाकर ही गांव वापस लौटते हैं। इस अवधि में अल्पाइन घास के आहार से मवेशियों के दूध में अप्रत्याशित वृद्धि होने से ग्रामीणों के घरों में संपन्नता आ जाती है। इसलिए हर वर्ष मध्य अगस्त में वे प्रकृति का आभार जताने के लिए इस उत्सव को मनाते हैं। इस दौरान प्रकृति देवता की पूजा-अर्चना की जाती है। छाछ-मक्खन, दूध-दही की होली इस पूजा का ही हिस्सा है।

मक्खन की हांडी टूटते ही शुरू होता है बटर फेस्टिवल का जश्न

अंढूड़ी उत्सव में शामिल होने के लिए गाजे-बाजों के साथ पंचगाई रैथल समेत नटीण, बंद्राणी, क्यार्क, भटवाड़ी के आराध्य समेश्वर देवता की डोली और पांचों पांडव के पश्वा दयारा बुग्याल पहुंचते हैं। लोक परंपरा के अनुसार इस दौरान समेश्वर देवता कफुवा डांगरियों (छोटी कुल्हाड़ी) पर चलकर मेलार्थियों को आशीर्वाद देते हैं। फिर वन देवता समेत स्थानीय देवी-देवताओं को छानियों से एकत्रित दूध, दही, मट्ठा व मक्खन का भोग लगाने के साथ राधा-कृष्ण बने युवा मक्खन की हांडी तोड़ते हैं और शुरू हो जाता है बटर फेस्टिवल का जश्न। ग्रामीण एक-दूसरे पर गुलाल की जगह दूध-मक्खन लगाकर होली खेलते हैं। इसके दीदार को यहां पर्यटकों की भारी भीड़ उमड़ती है।

पहले गोबर से खेली जाती थी होली

अंढूड़ी उत्सव में पहले गाय के गोबर से होली खेली जाती थी। कालांतर में जब यह उत्सव पर्यटन से जुड़ गया तो ग्रामीणों ने मक्खन और मट्ठे की होली खेलना शुरू कर दिया। इससे अंढूड़ी उत्सव को ‘बटर फेस्टिवल’ के रूप में व्यापक पहचान मिली। स्थानीय लोग मानते हैं कि बुग्याल की घास की वजह से ही उनके मवेशी पलते हैं और उन्हें पौष्टिक दूध मिलता है। इस फेस्टिवल में राधा-कृष्ण की भी प्रतीकात्मक पूजा की जाती है।

बिखरती है रासों व तांदी की मनमोहक छटा

बटर फेस्टिवल के दौरान पर्यटकों को मंडुवा और गेहूं के आटे की रोटी के साथ मक्खन, घी, दूध, दही और अन्य पारंपरिक व्यंजन परोसे जाते हैं। साथ ही बिखरती है पारंपरिक लोकनृत्य रासों व तांदी की मनमोहक छटा। ढोल-दमाऊ की मधुर लहरियों पर महिला व पुरुषों की टोली के थिरकते कदम समां बांध देते हैं। ऐसा प्रतीत होता है, जैसे पूरी प्रकृति झूम रही हो।

मखमली घास के अलावा भी बहुत-कुछ है यहां

दयारा बुग्याल में रंग-विरंगे जंगली फूल, अल्पाइन जड़ी-बूटी, तितली व पशु-पक्षियों की समृद्ध विविधता देखने को मिलती है। इस ट्रेक पर हिमालयी नीले खसखस, आर्किड, रोडोडेंड्रोन, हिमालयी मोनाल, तीतर, चील, कस्तूरी मृग, हिमालयी काला भालू, लोमड़ी आदि का दीदार भी हो जाता है। इसके अलावा आप यहां से बंदरपूंछ, गंगोत्री पर्वतमाला, श्रीकांत श्रेणी, ब्लैक पीक, द्रौपदी का डांडा आदि चोटियों को भी निहार सकते हैं।

सौ किलो मक्खन, दो क्विंटल मट्ठा

स्पेन के 'ला टोमाटीना' फेस्टिवल में हजारों की संख्या में लोग शामिल होते हैं। यह फेस्टिवल भी अगस्त में आयोजित होता है और इसमें लगभग 2,50,000 पाउंड टमाटर इस्तेमाल होते हैं। वहीं, उत्तरकाशी के बटर फेस्टिवल में तकरीबन दो क्विंटल मठ्ठा और सौ किलो मक्खन की होली खेली जाती है। इसके अलावा दूध-दही का भी खूब इस्तेमाल होता है।

You must certainly have heard about the unique tomato Holi festival ‘La Tomatina’ celebrated in Spain, a European country. In much the same way, a Holi of butter and buttermilk is also played in the Uttarakhand Himalayas, known as the Andhundi Festival (Butter Festival). Dedicated to nature, this festival is organized at the famous Dayara Bugyal (alpine meadow), located in the Upla Takanour region of Uttarkashi district at an altitude of 11,000 feet above sea level. Tourists from India and abroad also arrive at Dayara in large numbers to enjoy this special festival. This festival is celebrated on Bhadrapada Sankranti. This year, the Sankranti falls on August 16. Come! Let us also behold the beauty of Dayara while getting drenched in showers of butter and buttermilk.


A Festival of Prosperity in Nature’s Lap

Dayara Bugyal, spread over an area of 28 square kilometers, is 42 km by road from Uttarkashi city and a six-kilometer trek from Raithal village in Bhatwari block, and the tradition of celebrating the Andhundi Festival has continued here for generations. In fact, as soon as the summer season begins, people from Raithal and the surrounding villages move with their livestock to their chhanis (temporary houses built for livestock) located in the bugyal region, and return to the villages only after celebrating the Andhundi Festival at the end of summer. During this period, the unexpected increase in the milk yield of the livestock due to their diet of alpine grass brings prosperity to the villagers’ homes. Therefore, every year in mid-August, they celebrate this festival to express gratitude to nature. During this time, the nature deity is worshipped. The Holi of buttermilk-butter and milk-curd is itself a part of this worship.

The Celebration of the Butter Festival Begins as Soon as the Pot of Butter Is Broken

To participate in the Andhundi Festival, the palanquin of the revered Sameshwar deity of Panchgai Raithal as well as Natine, Bandrani, Kyark and Bhatwari, accompanied by musicians, and the Pashwas of the five Pandavas, arrive at Dayara Bugyal. According to folk tradition, during this time Sameshwar deity blesses the festival-goers by walking on Kafuwa dangaris (small axes). Then, after offering milk, curd, buttermilk and butter collected from the chhanis to the forest deity and other local gods and goddesses, young men dressed as Radha-Krishna break a pot of butter, and the celebration of the Butter Festival begins. Instead of gulal, villagers smear milk and butter on one another and play Holi. A huge crowd of tourists gathers here to witness this.

Holi Was Earlier Played with Cow Dung

Earlier, Holi was played with cow dung during the Andhundi Festival. Over time, when the festival became associated with tourism, villagers began playing Holi with butter and buttermilk. This gave the Andhundi Festival widespread recognition as the ‘Butter Festival’. Local people believe that their livestock thrive and provide nutritious milk because of the grass of the bugyal. Radha-Krishna are also symbolically worshipped at this festival.

The Enchanting Splendor of Raas and Tandi Spreads Around

During the Butter Festival, tourists are served rotis made from mandua and wheat flour along with butter, ghee, milk, curd and other traditional dishes. At the same time, the enchanting splendor of traditional folk dances Raas and Tandi unfolds. The dancing steps of groups of women and men create a captivating atmosphere to the melodious rhythms of the dhol-damau. It seems as though all of nature itself is swaying.

Dayara Bugyal offers a rich diversity of colorful wildflowers, alpine herbs, butterflies and animals and birds. On this trek, one can also spot Himalayan blue poppies, orchids, rhododendrons, Himalayan monals, pheasants, eagles, musk deer, Himalayan black bears, foxes and more. Besides, from here you can also admire peaks such as Bandarpoonch, the Gangotri range, the Srikanta range, Black Peak, Draupadi Ka Danda and others.

One Hundred Kilograms of Butter, Two Quintals of Buttermilk

ख, समृद्धि और हरियाली का प्रतीक है लोकपर्व हरेला। यह पर्व जहां बारहमासा खेती को जीवंत बनाए रखने का प्रतीक है, वहीं नई ऋतु के शुरू होने की सूचना भी देता है, इसलिए इसे ऋतुपर्व भी कहा गया है। हरेला मनाने के पीछे समाज में एकजुटता, समरसता व सामंजस्य का संदेश छिपा हुआ है। जब संयुक्त परिवार बिखरते जा रहे हों, तब यह पर्व सभी को साथ रहने की शिक्षा देता है। संयुक्त परिवार कितना भी बड़ा हो, हरेला एक ही जगह यानी पैतृक घर में ही बोया जाता है। हरेला पहाड़ के लोक विज्ञान से भी जुड़ा है। इससे बीज की गुणवत्ता और अंकुरण प्रतिशत का अनुमान लग जाता है। इसलिए इसे बीज परीक्षण का पर्व भी कहा गया है। हरेला बुआई से ठीक पहले कर्क संक्रांति (श्रावण मास की प्रतिपदा तिथि) को मनाया जाता है। एक दौर में कुमाऊं व गढ़वाल मंडल के कुछ हिस्सों तक सीमित रहा यह पर्व आज अस्थायी राजधानी देहरादून समेत पूरे उत्तराखंड का लोकपर्व बन चुका है और समय के साथ राष्ट्रीय-अंतरराष्ट्रीय स्तर पर प्रतिष्ठित होता जा रहा है। ...तो आइए! हम भी इस पर्व का हिस्सा बनकर लोकजीवन की समृद्धि की कामना करें।


प्रकृति व मानव के सहअस्तित्व और प्रकृति के संरक्षण की सीख

पर्वतीय लोकजीवन का अनूठापन है इसमें निहित पर्यावरणीय चेतना। लोकपर्व हरेला इसी पर्यावरणीय चेतना का प्रतिबिंब है। यह पर्व हमें नदी, पहाड़, पत्थर, मिट्टी व हरियाली को सहेजने का संदेश देता है। भाव यही है कि- ‘जी रये, जागि रये, तिष्ठिये, पनपिये, दुब जस हरी जड़ हो, ब्यर जस फइये, हिमाल में ह्यूं छन तक, गंगज्यू में पांणि छन तक, यो दिन और यो मास भेटनैं रये, अगासाक चार उकाव, धरती चार चकाव है जये, स्याव कस बुद्धि हो, स्यू जस पराण हो’ (अर्थात तुम जीते रहो और जागरूक बने रहो, हरेले का यह दिन-बार आता-जाता रहे, वंश-परिवार दूब की तरह पनपता रहे, धरती जैसा विस्तार मिले, आकाश की तरह उच्चता प्राप्त हो, सिंह जैसी ताकत और सियार जैसी बुद्धि मिले, हिमालय में हिम रहने और गंगा जमुना में पानी बहने तक इस संसार में तुम बने रहो…।) देखा जाए तो इस मंगलकामना में जहां ‘जीवेद् शरद शतम्’ का पावन भाव निहित है, वहीं प्रकृति व मानव के सहअस्तित्व और प्रकृति के संरक्षण की सीख भी।

मिश्रित खेती को बढ़ावा देता है लोकपर्व हरेला

हरेला पर्व सीधे तौर पर प्रकृति के साथ सामंजस्य बैठाने की भूमिका में नजर आता है। यह पर्व लोक विज्ञान और जैव विविधता से भी जुड़ा हुआ है। हरेला बोने और नौ-दस दिनों में उसके उगने की प्रक्रिया को एक तरह से बीजांकुरण परीक्षण के तौर पर देखा जा सकता है। इससे यह सहज पूर्वानुमान लग जाता है आगामी फसल कैसी होगी। हरेले में मिश्रित बीजों के बोने की जो परंपरा है वह बारहनाजा अथवा मिश्रित खेती (मिक्स्ड क्रापिंग) को बढ़ावा देती है। मिश्रित फसल टिकाऊ कृषि (सस्टेनेबल एग्रीकल्चर) के लिए बहुत ज़रूरी है, जो वर्तमान के साथ भविष्य की भी मांग है। आबादी बढ़ने, कृषि योग्य भूमि के कम होने और गिरते भूजल स्तर से छुटकारा पाने के लिए मिश्रित खेती एक बेहतर विकल्प है।


हरेला रोपकर प्रकृति के देवता का स्वागत

हरेला का सांस्कृतिक पक्ष देखें तो नवविवाहिताएं इस दिन अपने मायके आती हैं और प्रवासी अपने घर। जो किन्हीं कारणों से घर नहीं जा पाते, आज भी उनके स्वजन डाक अथवा किसी परिचित के हाथ उन्हें हरेला भेजते हैं। हरेला भगवान शिव की अभ्यर्थना से भी जुड़ा हुआ है। कहते हैं कि शिव को सावन अतिप्रिय है। इस महीने वह अपनी ससुराल देवभूमि आते हैं और यहां के निवासी हरियाली
रोप कर प्रकृति के इस देवता का स्वागत करते हैं। इस दौरान शुद्ध मिट्टी व प्राकृतिक रंगों से शिव-पार्वती व शिव परिवार की प्रतिमाएं गढ़ी जाती हैं और उन्हें हरेला के साथ स्वाले व उड़द की दाल की पकौड़ियां अर्पित की जाती हैं।


घर में पूजास्थल या गांव के मंदिर में बोया जाता है हरेला

परंपरा के अनुसार पर्व से दस दिन पूर्व घर में देवता के स्थान या गांव के मंदिर में सात प्रकार के अन्न (जौ, गेहूं, मक्का, गहत, सरसों, उड़द और भट) को रिंगाल या बांस की टोकरी अथवा पत्तों के दोने में एक विशेष प्रक्रिया से रोपित किया जाता है। पहले टोकरी में मिट्टी की एक परत बिछाई जाती है और फिर उस पर बीज डाले जाते हैं। यह प्रक्रिया पांच से छह बार दोहराई जाती है। फिर इन टोकरियों को देवता के स्थान पर रखकर बीज को रोजाना जल के छींटों से सींचा जाता है। दो-तीन दिन में ये बीज अंकुरित होकर हरेला पर्व तक सात-आठ इंच लंबे तृण का आकार ले लेते हैं। इन टोकरियों को सूर्य की सीधी रोशनी से बचाया जाता है। नवें दिन दाड़िम की टहनी से इनकी गुड़ाई की जाती है और दसवें दिन इसे काटा जाता है। कहीं-कही हरेला को नवें दिन काटने की परंपरा है। हरेला को काटने के बाद गृह स्वामी इसे तिलक, चंदन व अक्षत से अभिमंत्रित करता है।


सूर्य के दक्षिणायन का पर्व

भारतीय काल गणना और मानसून विज्ञान की दृष्टि से भी श्रावण संक्रांति को बोये जाने वाले हरेले का विशेष महत्व है। इसी दिन सूर्यदेव दक्षिणायन यानी कर्क से मकर रेखा में प्रवेश करते हैं और धीरे-धीरे रातें बड़ी होने लगती हैं। आध्यात्मिक दृष्टि से इस पर्व को शिव विवाह से जोड़ा जाता है। इस दिन शिव परिवार की पूजा कर उसे हरेला अर्पित किया जाता है। वहीं, प्रकृति के संरक्षण की दृष्टि से देखें तो हरेला सूखे चाल-खाल व तालाबों को भरने और नए जलाशयों के निर्माण का पर्व भी है।

साल में तीन बार आता है हरेला

हरेला ऐसा पर्व है, जो साल में एक नहीं, तीन बार आता है। उत्तराखंड के लोग इस पर्व को चैत्र, सावन व आश्विन (क्वार) शुरू होने पर मनाते हैं। इनमें सबसे अधिक महत्व सावन के पहले दिन पड़ने वाले हरेला पर्व को दिया गया है, क्योंकि यह सावन की हरियाली का प्रतीक है।

The folk festival Harela is a symbol of happiness, prosperity and greenery. This festival is a symbol of keeping the farming alive throughout the year, and at the same time it also informs about the beginning of a new season, therefore it is also called Rituparva. The message of unity, harmony and harmony in the society is hidden behind celebrating Harela. When joint families are falling apart, then this festival teaches everyone to live together. No matter how big the joint family is, Harela is sown in one place only, that is, in the ancestral house. Harela is also connected to the folk science of the hills. It gives an estimate of the quality of the seed and the germination percentage. Therefore it is also called the festival of seed testing. Harela is celebrated on Kark Sankranti (Pratipada Tithi of Shravan month) just before sowing.  This festival which was once limited to some parts of Kumaon and Garhwal division, has today become a folk festival of entire Uttarakhand including the temporary capital Dehradun and with time it is gaining prestige at national and international level. ...So come! Let us also become a part of this festival and pray for the prosperity of folk life.

Lessons of coexistence of nature and man and conservation of nature
-----------------The uniqueness of the mountain folk life is the environmental consciousness inherent in it. The folk festival Harela is a reflection of this environmental consciousness. This festival gives us the message of preserving rivers, mountains, stones, soil and greenery.  The meaning is - 'Live, stay awake, survive and prosper, be like the grass with green roots, spread like the jackal, till there is snow in the Himalayas, till there is water in the Ganges, may this day and this month continue, may the four directions of the sky be there, may you have the intelligence of a fox, may you be like the life of a fox' (meaning may you live and remain awake, may this day of Harela come and go again and again, may your family flourish like the grass, may you get the expanse of the earth, may you attain the height of the sky, may you get the strength of a lion and the intelligence of a jackal, may you remain in this world as long as there is snow in the Himalayas and water flows in the Ganga and the Yamuna….) If seen, this good wish contains the sacred feeling of 'Jived Sharad Shatam', and also the lesson of coexistence of nature and man and conservation of nature.  


Harela, a folk festival promoting mixed farming

Harela festival is directly seen in the role of establishing harmony with nature. This festival is also connected to folk science and biodiversity. The process of sowing Harela and its growth in nine-ten days can be seen as a kind of seed germination test. This gives an easy prediction of what the upcoming crop will be like. The tradition of sowing mixed seeds in Harela promotes Barahnaaja or mixed cropping. Mixed cropping is very important for sustainable agriculture, which is a demand of the present as well as the future. Mixed farming is a better option to get rid of the growing population, decreasing cultivable land and falling groundwater level.

Welcoming the God of Nature by planting Harela

If we look at the cultural aspect of Harela, newly married women come to their maternal home on this day and migrants to their homes. Those who are unable to go home due to some reasons, even today their relatives send them Harela by post or through some acquaintance. Harela is also associated with the worship of Lord Shiva. It is said that Shiva loves Sawan very much. He comes to his in-laws' place Devbhoomi in this month and the residents here welcome this God of Nature by planting greenery. During this time, idols of Shiva-Parvati and Shiva family are made from pure clay and natural colors and they are offered Swale and Urad dal pakodas along with Harela.  



Harela is sown at the place of worship in the house or in the village temple

According to tradition, ten days before the festival, seven types of grains (barley, wheat, maize, gram, mustard, urad and bhat) are sown in a ringal or bamboo basket or a leaf plate in a special process at the place of the deity in the house or in the village temple. First a layer of soil is spread in the basket and then the seeds are sown on it. This process is repeated five to six times. Then these baskets are placed at the place of the deity and the seeds are watered daily with water sprinkles. In two-three days these seeds germinate and take the shape of seven-eight inch long grass by the time of Harela festival. These baskets are protected from direct sunlight. On the ninth day they are weeded out with a pomegranate twig and on the tenth day it is cut. At some places there is a tradition of cutting Harela on the ninth day.  After cutting Harela, the homeowner consecrates it with tilak, sandalwood and Akshat.

Festival of the Sun's Dakshinayan

Harela sown on Shravan Sankranti has special importance from the point of view of Indian time calculation and monsoon science. On this day, the Sun God enters the Capricorn line from the Dakshinayan i.e. Cancer and gradually the nights start getting longer. क पड़ोसी के किचन गार्डन में इन दिनों पिंडालू (पिनालू) के पत्तों की हरियाली सम्मोहन बेखर रही है, लेकिन पड़ोसी को नहीं मालूम कि पिंडालू के ये पत्ते कितनी काम की चीज हैं। शायद उसने और उसके परिवार ने कभी पिनालू के पत्यूड़ (पतोड़) नहीं खाए। अन्यथा ये पत्ते इस तरह मुंह न चिढ़ा रहे होते। बरसात के यही दिन तो हैं पत्यूड़ के जायके का आनंद उठाने के। पहाड़ की इस स्पेशल डिस को बनाने के लिए धैर्य की जरूरत होती है और मेहनत भी खूब लगती है। लेकिन, खाने में जो मजा आता है, उसके कहने ही क्या। ...तो चलिए आज किस्से-कहानी को छोड़ पिंडालू के पत्तों की ही बात करते हैं। जीवन के हर क्षेत्र में एकरसता जड़ बना देती है, सो इस तरह का बदलाव नितांत जरूरी है। हम भी उस बदलाव की शुरुआत पड़ोसी से पिंडालू के कुछ पत्ते मांगकर करते हैं, ताकि आपको पिंडालू के पत्यूड़ बनाना सिखा सकें-

पत्यूड़ बनाने की विधि

सबसे पहले पिंडालू या पिनालू के पत्तों के रेसे अलग कर उन्हें अच्छी तरह धो लें और पानी सूखने दें। एक चौड़े बर्तन या डोंगे में बेसन का गाढ़ा घोल तैयार कर लें। इसमें आवश्यकता के अनुसार हरा धनिया, अदरक-लहसुन का पेस्ट, भुना जीरा, आजवाइन, भांग के बीज, सोडा, चुटकीभर हींग, दो बड़े चम्मच नींबू रस और स्वादानुसार नमक व मिर्च मिला मिला दें। अब पिंडालू के पत्तों को बेसन के घोल में डुबोकर अलग-अलग या एक के ऊपर एक रखकर बेलनाकार आकृति में रोल कर लें। यह रोल खुलने न पाए, इसके लिए उसे धागे से अच्छी तरह बांध लें और कढ़ाई में तेल गरम कर पत्यूड़ों को धीमी आंच में गोल्डन ब्राउन होने तक फ्राई करते रहें। अच्छी तरह फ्राई होन पर इन्हें चूल्हे से उतार दें और हल्का ठंडा होने के बाद सोयाबीन, भट, तिल या हरी चटनी के साथ परिवार के सदस्य व मित्र-परिचितों को परोसें। गर्मागर्म चाय के साथ भी आप पत्यूड़ का जायका ले सकते हैं।

चाहो तो पत्यूड़ को भाप पर भी पका सकते हो। इसके लिए ऐसे बर्तन की जरूरत पड़ती है, जो जाली के सहारे ऊपर-नीचे दो हिस्सों में बंटा हो। इसके निचले हिस्से में पानी भरा जाता है और ऊपरी हिस्से में उपरोक्त विधि से ही पत्यूड़ तैयार कर उन्हें रखा जाता है। पानी जब गरम होता है तो उसकी भाप इन पत्यूड़ को पकाती है। तकरीबन 20 मिनट में पत्यूड़ पककर तैयार हो जाएंगे। फिर उन्हें बर्तन से निकालकर गोल-गोल टुकड़ों में काट लें और पैन या कढ़ाई में दो बड़े चम्मच तेल डालकर उसमें जखिया का छौंक लगाएं और इन टुकड़ों को कुरकुरे होने तक भूनें। लो जी, तैयार हैं गर्मागर्म पत्यूड़। आइए! मिल-जुलकर इनका आनंद लें।

पत्यूड़ बनाने के लिए जरूरी सामग्री

पिंडालू के पत्ते, बेसन, हल्दी, तेल, अजवाइन, भुना जीरा, भांग के बीज, खाने का सोडा, चार-पांच कटी हुई हरी मिर्च, लाल मिर्च पाउडर, नमक, हरा धनिया, अदरक-लहसुन का पेस्ट और हींग।

(नोट : सामग्री की मात्रा कितनी रहेगी, यह इस बात पर निर्भर है कि कितने लोगों के लिए पत्यूड़ तैयार किए जा रहे हैं। इसी हिसाब से मात्रा घट-बढ़ सकती है।)

Perhaps he and his family never ate Pindalu's Patyud (Patod). Otherwise these leaves would not have been teasing like this. These are the days of rainy season to enjoy the taste of Patyud. Patience is required to make this special dish of the hills and a lot of hard work is also required. But, the pleasure of eating it is beyond words. ...So let's leave the stories and talk about Pindalu leaves today. Monotony in every sphere of life makes one stagnant, so this kind of change is absolutely necessary. We also start that change by asking some Pindalu leaves from the neighbor, so that we can teach you how to make Pindalu's Patyud-

Method of making Patyud

First of all separate the fibers of Pindalu or Pinalu leaves and wash them well and let the water dry. Prepare a thick gram flour solution in a wide vessel or bowl. Add green coriander, ginger-garlic paste, roasted cumin, ajwain, bhang seeds, soda, a pinch of asafoetida, two tablespoons of lemon juice and salt and chilli as per taste. Now dip the Pindalu leaves in the gram flour solution and roll them separately or one above the other in a cylindrical shape. Tie it well with a thread so that the roll does not open and heat oil in a pan and fry the Patyud on low flame till it becomes golden brown. After frying well, remove them from the stove and after cooling down a bit, serve them to family members and friends with soybean, bhat, sesame or green chutney. You can also enjoy Patyud with hot tea.

If you want, you can also cook the patud on steam. For this, you need a vessel which is divided into two parts with the help of a net. Water is filled in its lower part and in the upper part, patud is prepared using the above method and kept. When the water is hot, its steam cooks these patud. Patud will be cooked in about 20 minutes. Then take them out of the vessel and cut them into round pieces and put two tablespoons of oil in a pan or wok and temper it with jakhiya and fry these pieces till they become crispy. Lo ji, hot patud are ready. Come! Enjoy them together.

Ingredients required for making patud

Pindalu leaves, gram flour, turmeric, oil, celery, roasted cumin, hemp seeds, baking soda, four-five chopped green chillies, red chilli powder, salt, green coriander, ginger-garlic paste and asafoetida.

 (Note: The quantity of ingredients depends on the number of people for whom the Patyuda is being prepared. The quantity may increase or decrease accordingly.)
